His mother, Angie, would constantly be cooking something, and loved to have her children involved in cooking. She taught Carlos and his three other siblings how to cook, and was always encouraging them to get better. One day while still in culinary school, he decided to get a job at an Italian restaurant called Alberto’s, where he became a waiter.
