RECIPE FOR KIMBAP:

Ingredients:

• 2 eggs

• 1/2 cucumber

• 1 carrot

• 4 slices ham

• 4 crab sticks

• 4 pickled radish (danmuji)

• 4 strips burdock root (optional)

• Sesame oil

• Salt

Instructions:

Prepare the rice:

1. Rinse the rice until the water runs clear.

2. Combine rice and water in a rice cooker or pot.

3. Cook according to package directions.

4. Once cooked, let the rice cool slightly.

5. Stir in sesame oil and salt.

Prepare the fillings:

1. Egg: Beat eggs and cook in a thin omelette. Let cool and cut into strips.

2. Cucumber: Slice cucumber into long thin strips.

3. Carrot: Julienne the carrot and stir-fry until tender-crisp. Season with salt.

4. Ham: Cut ham into long thin strips.

5. Crab sticks: Cut crab sticks in half lengthwise.

6. Pickled radish and burdock root: Cut into long thin strips.

Assemble the kimbap:

1. Lay a sheet of seaweed on a bamboo rolling mat with the shiny side down.

2. Spread a thin layer of rice evenly on the seaweed, leaving a small margin at the top.

3. Place your desired fillings in a line across the center of the rice.

4. Starting from the bottom, carefully roll the kimbap using the bamboo mat.

5. Moisten the top edge of the seaweed with a little water to seal the roll.

6. Cut the roll into bite-sized pieces using a sharp knife.

Tips:

• Use a sushi rice cooker for best results, as it produces a drier, stickier rice.

• For a more flavorful rice, add a teaspoon of rice vinegar and a pinch of sugar to the cooked rice.

• Experiment with different fillings like spinach, avocado, or kimchi.
